Egg White Turkey Bacon Sandwich
Ingredients
(Servings: 4 sandwiches)
You will need:
4 English Muffins (split) or 8 slices of better-for-you bread, toasted. I like this gluten-free multi-seed muffin from Food for Life, or this bread from Base Culture or The Grain Escape.
8 Organic Pasture-Raised Eggs or 1.5 cups of Organic Egg Whites. I like this one from 365.
8 slices Organic Turkey Bacon. I like this one from Applegate.
Avocado oil spray (for cooking). I like this one by Chosen Foods.
4 tbsp of your choice of dairy-free shredded cheese. I like this one from Violife. If you are dairy-tolerant, opt for organic, pasture-raised cheese.
Optional seasonings: Garlic powder, onion powder, black pepper, Celtic sea salt
***Optional but Recommended: This Ceramic Egg Frying Panwith 4 cups is a game-changer. It’s the perfect size for your eggs and has a detachable handle so you can pop it in the oven!
Directions
All you’ll need to do is:
Prep the Oven and Ingredients:
Preheat your oven to 400°F.
Line a baking sheet with parchment paper for the turkey bacon.
Cook the Turkey Bacon:
Lay all 8 slices of turkey bacon on the baking sheet.
Place it on the bottom rack for 22 minutes, flipping halfway through. (Adjust the time for your preferred crispiness—I like mine extra crispy!)
Prepare the Eggs:
Lightly spray your egg pan with avocado oil.
Pour 6 tablespoons of egg whites into each circle of the pan. Alternatively, crack 2 eggs into each circle of the pan. You can also do one egg white and one egg per circle if you’d like.
Add your favorite seasonings (garlic powder, onion powder, black pepper, and a pinch of Celtic sea salt are my go-tos!). Mix lightly with a fork.
Place the pan on the top rack of the oven along with the bacon.
Melt the Cheese:
After 11 minutes, pull the egg pan out and top each portion with your cheese of choice. You’ll wanna do this right after flipping your turkey bacon.
Put it back in the oven for a few more minutes to melt the cheese to your liking.
Toast the Bread or English Muffins:
While the egg whites and bacon are cooking, warm your Bread or English muffins in a toaster oven. Prepare them for assembly.
Assemble Your Sandwiches:
Place one egg-and-cheese portion and two slices of turkey bacon onto a slice of bread or English muffin.
Top with the other slice of bread or half of the muffin to complete your sandwich.
Serve:
These sandwiches pair perfectly with a small bowl of strawberries and blueberries or any fruit/veggies you like to balance out the savory flavors with some fiber!
